I barely felt like I was there...and it was so freakin' easy it seemed like a did nothing all night. Seriously - I did sheetouts for about three hours and then I did dishes, broke down the sheeter and then the lot of us just bitched about the HM's daughter, whom everyone loathes and despises with black, bitter, burning passion.

So I got home around 9:30 and actually ate dinner. Haven't done that in a while. It was nice, my mom made stew. And these yummy coffee flavored cookies. MMmmmm....I need to go get more of them.

Now I plan to start making a schedule so I get up and get stuff done. I'm getting mad at myself for always sleeping in 'til nine or ten each morning.

hmmmmm coffee cookies. Recipe?

Coffee Crisps:

4 tsp water
2 tsp instant coffee crystals
1/2 cup butter, softened
1 cup granulated sugar
1/4 tsp salt
2 eggs
1 1/2 cup all-purp flower

Icing:

1 Tbsp whipping cream
1/8 tsp instant coffee
1 cup powdered sugar

1)Line a large cookies sheet with parchment paper, set aside. In a small bowl stir together water and coffee crystals until crystals dissolve, set aside.

2)In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar and salt. Beat until combined. Beat in eggs and coffee mixture ntil combined. Beat in as much flour as you can with the mixer. Stir in any remaining flower win a wooden spoon.

3)Drop dough by slightly rounded teaspoons 2 in aprt onto prepared cookie sheet, spread dough into two in circles. Bake in a 350 oven for 9 to 11 minutes or until edges are slightly browned. Cool on cookie sheet for 2 minutes. Transfer to wire rack.

4)Drizzle with icing.
